Preheat oven to 425 degrees F
Cover a baking pan with aluminum foil (for easier cleanup), then spray lightly, but evenly with cooking spray. Set aside.
Rinse the thawed chicken pieces thoroughly and remove their skin (optional)
Place the chicken on the pan
Sprinkle them generously and evenly with salt, pepper, chipotle, paprika, ground cinnamon, ground mustard and cayenne pepper
Turn the pieces over and repeat on the opposite side
Place the chicken into the oven and allow them to cook for 50 minutes or until they're a dark golden brown
Remove them from the oven
Set aside to cool to 5-10 minutes
