Equipment

  • 13 x 9 x 2 inch baking pan
  • aluminum foil

Ingredients

  • 8 chicken thighs
  • 1 tbsp salt or to taste
  • ½ tsp black pepper
  • ½ tsp ground chipotle Mrs. Dash seasoning
  • 1 tbsp ground paprika
  • ½ tsp ground cinnamon
  • 1 tbsp ground mustard
  • ½ tsp cayenne pepper or to taste
  • 2 tbsp cooking spray

Instructions

  • Preheat oven to 425 degrees F
  • Cover a baking pan with aluminum foil (for easier cleanup), then spray lightly, but evenly with cooking spray. Set aside.
  • Rinse the thawed chicken pieces thoroughly and remove their skin (optional)
  • Place the chicken on the pan
  • Sprinkle them generously and evenly with salt, pepper, chipotle, paprika, ground cinnamon, ground mustard and cayenne pepper
  • Turn the pieces over and repeat on the opposite side
  • Place the chicken into the oven and allow them to cook for 50 minutes or until they're a dark golden brown
  • Remove them from the oven
  • Set aside to cool to 5-10 minutes
